Hey everyone :)

Wanna know how to make the most delicious cheesecake - in about 10-20 minutes?

You can eat it as soon as it's ready too!

Firstly, let me explain that English cheesecakes are very different to typical Japanese cheesecakes - in fact, that was my reason for wanting to make one in the first place... my boyfriend really likes cheesecakes, but I wanted him to try a typical English cheesecake - I think they're kinda richer in texture, less soft and fluffy, and definitely more cheesy...

My first attempt, using a recipe I found online, involved eggs, and took ages to make... it tasted fine, but more or less like a normal sweet-cake, not the rich and creamy traditional English cheesecake that I was aiming for.

So I asked my friend from England for his recipe, as he makes delicious cheesecakes. I was really surprised because, it was much more simple and no baking was involved, so you can eat it as soon as you're done mixing! ;-P

I forget the exact amounts, but basically, you need:

1 packet of cream cheese

1 packet of cream

(the type that starts off runny, but you can whip to make really thick and fluffy)

1/2 cup of icing sugar

1 packet of digestive biscuits

1/4 pack of butter

Break up the digestive biscuits into small crumbly bits and melt the butter into the mixture. This will be the base of your cheesecake, so place it into a round tray/dish.

Next, whip the cream until it is no longer liquid-y, then mix in the icing sugar and cream cheese (it may help to slightly warm the cheese first so that it's easier to mix).

That's it... you're done.... just pour/place the creamy cheesy layer onto the base and put it in the fridge to cool. You can eat it straight away, but it's nicer cooler... and also the cheesy layer hardens to a nicer texture. I guess typically in England, we always add a layer of sweet fruits such as blackberries, or strawberries.... maybe use a thick jam or something.... or just leave it plain.

Easy right?

Have a go yourself and lemme know if you're successful, and how you think it compares to the Japanese style.

(NB! - the picture above is NOT my cheesecake... sorry! I didn't have a good picture of mine... this one's just to get your attention hooked ;-P) Actually, next time I'm gonna try making a chocolate cheesecake, by melting some plain dark chocolate and pouring swirls of it into the cheesy mixture...

yummmmmmy- my mouth's watering already! ;-P
